Truffle Hunting in Tuscany: The Season Is Set by Law, and What the Hunts Cost

The top organic result on Google for truffle hunting in Tuscany is a Reddit thread. Everything under it is somebody selling you a hunt: three Google Business listings, four operators, a luxury hotel, a wine estate and GetYourGuide. Not one editorial page comparing them.
When the best answer Google can find is a comment thread, the field is open. So we did two things nobody in those results had done. We read the law that sets the season, and we priced every bookable hunt we could find on the same day in the same currency.
The season is set by law, not by the operator
This is the part that surprised us. In Tuscany the truffle calendar is not a rule of thumb or a trade custom. It is article 8 of regional law 36 of 2 August 2023, amended in July 2024, and it sets an opening and closing date for each species by name.

Two rows deserve pulling out. Tuber magnatum, the white truffle that everybody means when they say truffle, opens on 1 October, which is tomorrow as we publish this. And the summer truffle has a split season: legal from June to the end of August, illegal through September, legal again from October to the end of November. That gap is why so many English-language guides garble the summer dates. They are describing one season where the law defines two.
Two months when nobody may legally dig
Comma 2 of the same article is one sentence long and it contradicts half the internet: searching for and collecting truffles is prohibited across the entire region, for every species, in the months of May and September. The law calls it a fermo ecologico, a biological rest period.
Before publishing that we went looking for the loophole, because a rule that easy to break would not survive a commercial season. There is none. Article 12, comma 7 says that searching and collecting inside a recognised cultivated truffle ground, private and fenced and owned by the person digging, must still respect the article 8 calendar. Article 11 says the same for managed natural grounds. Owning the land does not buy you September.

We want to be precise about what this does and does not mean, because it would be easy to turn it into an accusation and we are not making one. We have not audited any operator’s calendar. What the law says is that a truffle cannot legally be taken out of Tuscan ground in May or September. An operator running something in those months could perfectly well be doing a demonstration, a tasting, a dog-training session or a cookery class, and several advertise exactly that. What you should not assume is that you will be digging.
The practical version: if your dates fall in May or September, ask the operator in writing what will actually happen, and treat a booking page that promises a harvest as a reason to ask harder.
What five operators charge for the same walk
We priced every bookable truffle hunt we could find for the same mid-November dates, in euros, on 30 September 2026. The spread is nearly five to one.

The GetYourGuide category page for Tuscan truffles advertises from $62.65, and the Torciano wine estate publishes 190 to 630 euros for its own version. We have not been able to reproduce either figure in a booking, so we are quoting them as what those two sites publish rather than as prices we have verified.
Where the money actually goes
Read the two San Miniato products next to each other and the whole market becomes legible. They are the same activity, in the same town, an hour apart on the map.
One is 100 euros for the hunt and a truffle tasting with wine. The other is 200 euros for the hunt and a sit-down lunch. The lunch costs one hundred euros. That may well be worth it. It is simply not what the booking page tells you you are choosing between.
And the 200 euro listing gives away the thing the whole category is built on. Its own option description reads: “Duration: 3 hours … the stroll takes 1 hr”. One hour in the woods. The full-day products at 335 and 480 euros are not longer hunts, they are the same hour with a coach from Florence, a second town and a longer meal around it.
So the question is not which hunt is best. Every one of them is the same hour behind a dog. The question is what you want wrapped around it, and whether you would rather buy the wrapping separately.
Truffle Hunting & Tasting in San Miniato Tuscany with Dogs
100 euros for the hunt and a truffle tasting with wine, no lunch. It is the only one of the five with free cancellation up to 24 hours, the only one that takes children from age one, and it will book for a single traveller. The 5.0 is from 56 ratings, which is less evidence than the 200 euro option next door has, and we would still start here.
Truffle Hunting Experience with Lunch in San Miniato
391 ratings at 4.91 is the strongest evidence in the category by a distance, and the lunch is the reason people rave about it. Two things to know before you click: the operator's own text says the walk itself is one hour of the three, and the cancellation policy is ALL SALES FINAL, with no refund at any notice. Minimum two people, minimum age eight.
Full-Day Small-Group Truffle Hunting in Tuscany with Lunch
335 euros and seven hours, with transport from Florence and a long lunch. The hunt inside it is the same hour as the 100 euro one, so what the extra 235 buys is the coach, the meal and not having to think. Worth saying plainly: the train to San Miniato is 6.60 euros each way. No free cancellation.

We have not re-checked its price this week, so treat the figure there as of its own date rather than today’s.
Getting to San Miniato yourself: 6.60 euros
Both San Miniato products meet you at the meeting point and neither includes transport. Nobody in the search results tells you what that leg costs, so we measured it on Trenitalia’s own booking system.
Florence Santa Maria Novella to S. Miniato-Fucecchio: forty services a day, thirty-two of them direct, at 6.60 euros. That fare does not move. Not by hour, not by how far ahead you book, not between the two dates we sampled. Every single one of the forty was 6.60.
Most direct runs take 40 or 41 minutes. One, the 05:35, does it in 32. The two slowest take 52 and 53. We ran the full-day sweep twice, for Wednesday 21 October and Wednesday 11 November, and got an identical distribution both times, down to the count in each duration band.
So the honest arithmetic on the cheapest hunt is 100 euros plus 13.20 for the return train, against 335 for the full-day version from Florence. You are paying roughly 220 euros for a coach seat, a lunch and somebody else’s itinerary. Some days that is a fair trade. It is worth knowing it is the trade you are making.
One caveat we will not paper over: we measured the train, not the last mile. The station sits down in the Arno valley and both the historic centre and the hunting meeting points are up in the hills above it. Ask your operator how they expect you to cover that gap before you assume a taxi exists at the door.

The two San Miniato fairs that are not the same fair
San Miniato is the centre of gravity for all of this, and it has a white truffle fair that people travel for. It has, in fact, two of them, in two different places, in two different months, and in conversation both get called the San Miniato truffle fair.
The 40th Fiera Mercato del Tartufo Bianco is on Saturday 3 and Sunday 4 October 2026, in Corazzano, a hamlet of the San Miniato comune. Saturday opens at 17:30 with a photographic exhibition and a truffle dinner at 19:30. Sunday has the stalls from 10:00, live music from 17:30 and a second truffle dinner. The restaurant needs booking on 0571 462804.
Buried in that Sunday programme is the best-value item on this entire page. At 15:30 there is a public demonstration of truffle digging with the dogs, in a village square, at no charge. It is not a hunt and you will not keep anything. But if what you actually want is to watch a Lagotto find a truffle and see how it is lifted out of the ground, that is the 200 euro moment, free, this coming weekend.
The Mostra Mercato Nazionale del Tartufo Bianco delle Colline Sanminiatesi is the big one, in the historic centre of San Miniato itself, on the last three weekends of November: 14 and 15, 21 and 22, and 28 and 29 November 2026. The regional tourist board, the provincial board and the organising foundation all publish those same six days.
Note what the dates mean next to the calendar above. The November fair sits squarely inside the white truffle season, which opened on 1 October. The October fair in Corazzano falls three days after it opens, which is why a digging demonstration is legal that weekend and would not have been the weekend before.
The rules your guide is working under
None of this applies to you as a visitor, because you are walking with somebody who holds the licence rather than collecting yourself. It is worth knowing anyway, because it explains most of what you will see.
- The permit costs 92.96 euros a year, after a training course of at least thirty hours and an exam. Minimum age sixteen. The card is then valid across Italy and lasts ten years.
- Two dogs maximum, including any dog in training. That is the legal definition of a search, not a guideline.
- Searching without a dog is an offence, and so is searching without a proper tool. This is why the guide carries that narrow wooden-handled spade in the photographs: turning the soil over with a hoe or a rake is separately banned, and so is leaving the holes open.
- Fines run from 500 to 5,000 euros, doubled for a repeat offence within five years, with the licence suspended for a year on top for several of them. The specific fine for hunting outside the calendar or outside the legal hours was added to the law in July 2024, which tells you something about how seriously the region is now taking the closed season.
The legal hours are the detail most likely to affect your booking, because they are tighter than daylight in the good months:

If somebody offers you a sunset truffle hunt in November, 17:30 is the latest it can legally still be running.
What we have not checked
The same list we put on every page, because the things we did not verify matter as much as the things we did.
- We have not done a truffle hunt ourselves. Everything above is the law, the operators’ own published terms and our own train measurements. None of it is a report of what the morning feels like.
- We have not audited any operator’s calendar against the closed season, and we are not suggesting anybody is breaking the law.
- We do not know whether these hunts take place in wild woodland or in recognised cultivated grounds. It makes no difference to the legal calendar, which applies to both. It makes a large difference to what the word wild is doing in the marketing.
- We have not measured the last mile from S. Miniato-Fucecchio station to the meeting points or up to the historic centre.
- We have no prices for truffles at either fair. They are not published in advance and they move with the harvest, sometimes week to week.
Questions
How much does it cost to hunt truffles in Italy?
In Tuscany, between 100 and 480 euros a head for the five products we priced on 30 September 2026. The cheapest is 100 euros for a hunt and a tasting in San Miniato with no lunch and free cancellation up to 24 hours before. The most reviewed is 200 euros for the same kind of walk in the same town with a full lunch added, and it is non-refundable from the moment you book. The expensive end, 335 to 480 euros, buys transport from Florence and a longer day rather than a longer hunt. Getting yourself to San Miniato by train costs 6.60 euros each way.
When should you go truffle hunting in Tuscany?
Late October to mid January if you want the white truffle, because Tuscan regional law allows Tuber magnatum to be collected only from 1 October to 15 January. Mid November to mid March for the prized black. Never in May or September: regional law 36/2023 closes the search and collection of every truffle species across the whole region in those two months for what it calls a biological rest period, and the ban applies inside private cultivated truffle grounds too. Several English-language guides say Tuscan truffle hunting runs year-round. It does not.
Where is the best place in Italy to hunt truffles?
We will not rank Italy, but Tuscan law will tell you where Tuscany rates itself. Article 6 of regional law 36/2023 delimits seven official zones of provenance: the white truffle of the Casentino, of the Colline Sanminiatesi around San Miniato, of the Crete Senesi, of the Mugello, of the Val Tiberina, of the Lucchesia, and the marzuolo of the Maremma coast near Grosseto. San Miniato is where almost every bookable hunt we found is based, and it is forty minutes by train from Florence.
Do they use dogs or pigs to find truffles in Tuscany?
Dogs, and it is not a preference. Article 7 of regional law 36/2023 makes searching or collecting without the help of a dog a finable offence, alongside collecting without a proper tool, and the fine runs from 500 to 5,000 euros. The same law caps you at two dogs at a time, including one in training. Pigs are not an option you can choose in Tuscany.
